Kingston Negroni

I love a traditional Negroni, but this may be even better. A little sweeter, more depth of flavor and a silky mouth feel. I'll be making more of these.

1oz Smith & Cross Jamaica Rum
1oz Carpano Antica Sweet Vermouth
1oz Campari

Combine all ingredients in an old fashioned glass with a large ice cube. Stir until chilled. Garnish with an orange twist.

Rum Old Fashioned

There are plenty rum riffs on the classic whiskey cocktail, but if you have these rums, this one is certainly worth a go. If you don't have these rums, get your ass to the liquor store -a daiquiri with Stiggins' Fancy is fantastic, and the OFTD is a great addition to a mai tai rum mix.

1oz Plantation OFTD Rum
1oz Plantation Pineapple Rum
1 Bar Spoon Demerara Syrup
A Few Dashes Burlesque Bitters
A Couple Dashes Orange Bitters

Combine ingredients over ice in an old fashioned glass. Stir until chilled. Garnish with a lime twist.

Grog

Nothing more complicated than what sailors of ole earned -rum, citrus, water (ice); the sugar is a bonus.

.5oz Lime Juice
.5oz Simple Syrup
2oz Rum

Combine all ingredients in a shaker with ice. Shake and open pour into an old fashioned.

Planter's Punch

A fairly simple Tiki cocktail. Make it your own by playing with the juice, rum and bitters.

.25 Allspice Dram
3oz Blended Aged Rum
2 Dashes Angostura Bitters

Combine all ingredients and shake with ice. Open pour into a Collins glass. Garnish with mint.

Bitter Daiquiri

 2oz Pineapple Rum
.25oz Campari
.5oz Lime Juice
.5oz Simple Syrup

Shake with ice and double strain into a coupe.

Jets to Brazil

The bastard child of a daiquiri and Jungle Bird. The addition of Aperol elevates it above the Bitter Daiquiri

1.5oz Pineapple Rum
.5oz Lime Juice
.5oz Demerara Syrup
.25oz Campari
.25oz Aperol

Shake with ice and double strain into a coupe.

Affinity

2oz Scotch -Blended or Highland Single Malt
.5oz Sweet Vermouth
.5oz Dry Vermouth
2 Dashes Angostura Bitters

Combine ingredients over ice and mix. Strain into a coup. Garnish with a cherry and/or citrus twist.

Full Monte

This take on the reverse Manhattan is best with a bold & spicy rye.

2oz Amaro Montenegro
1oz Rye Whiskey
1 Dash Angostura Bitters
1 Orange Twist

Add the amaro, whiskey and bitters into a mixing glass with ice and stir until well-chilled. Strain into a rocks glass over fresh ice. Express the oil from the orange twist over the top of the drink and discard. Garnish with a cherry.

You could also build in the glass and save yourself some dishes.
